Baked Mancakes
There are some mornings I crave a GIANT breakfast! This recipe may take a long time to bake, but is so easy to make ahead and reheat when I need it (although cold is good too). This version is based on a recipe by my inspiring Beachbody Coach Maegan Blinka. My kids even love this pancake bake!
Servings: 4
Ingredients:
2 cups of oats
16 egg whites (28 ounces)
1 large banana (or 2 small)
3 tsp cinnamon
2 Tbs baking powder
2 tsp vanilla extract
1 Tbs almond extract
3 Tbs Stevia in the Raw (optional for extra sweetness)
2 Cups Berries (frozen are a-okay!)
Walnuts (optional)
Container Equivalents: 1 Yellow, 1 Purple and 1/2 Red with each serving
Directions:
1. Preheat oven to 350 degrees
2. Combine oats, egg whites, banana, cinnamon, baking powder, and extracts in a blender and blend until smooth (you’ll see some oats but that’s okay!!!)
3. Spray 9×13 baking pan with coconut or olive oil and pour in the batter
4. Sprinkle fresh or frozen berries throughout (and walnuts if you would like to use them)
5. Bake at 350 for 40-45 minutes. Make sure you test the center so its cooked fully (note: using frozen fruit may prolong the baking time 10 minutes)
6. Break into 4 pieces and now you have 4 breakfasts ready to go! I eat them plain, but you can definitely add a teaspoon or two of pure maple syrup or agave nectar.
